Our most in-demand lobster is a 2 or 2.5-pounder, a size that correlates to fresh, succulent, slightly sweet, incredibly flavorful meat. Larger lobsters, though, make for a jaw-dropping culinary presentation, and smaller specimens (our highly coveted chickens, which are 1-1.25 pounds) are unrivaled in taste.
